Foodie Tuesday – Healthy Chocolate Crackles

Welcome back to our guest foodie blogger, Michelle from The Source Bulk Foods Lane Cove. In her continuing quest to share some family-friendly recipes, she shares a recipe for “Healthy Chocolate Crackles”.

The dreaded school lunchbox preparation is an endless cycle of ‘what on earth can I put in today that is healthy but enticing enough for them to actually put it in their mouths’. I oscillate between lovingly crafted and baked goodies to basics thrown together in the semi-darkness of the early morning.

This time is was Sunday night, dinner was brewing away nicely and I had a spare 10min to get inspired for the week. A glance around the pantry revealed an odd array of options so it was time to get creative – breakfast items and pantry staples soon resulted in the perfect recess snack in the allocated 10min – ‘Chocolate Crackles’. And to my utter surprise both girls loved them!

Ingredients (makes enough to fill a 12 cup muffin tin)
• 2 cups TSBF brown rice puffs
• 1½ cups TSBF desiccated coconut
• ½ cup melted TSBF coconut oil
• ½ cup TSBF raw cacao powder
• ¼ cup TSBF tahini (or nut butter, but not for school)
• ¼ cup TSBF maple syrup, honey, rice malt syrup (or whatever sweetener you prefer)
• Few drops of vanilla essence
• Pinch of TSBF fine Himalayan sea salt
• ½ tbsp TSBF protein or superfood powder (optional if you need to boost energy levels for kids who are tricky to convince to eat a rounded diet – the crackles are so tasty that they won’t even notice it)

Method
Blitz the coconut oil, cacao powder, tahini, maple syrup, vanilla, salt and powder if using in a blender or food processor.

Add to a large bowl with the rice puffs and desiccated coconut and mix until coated.

Line a 12-cup muffin tin with patty cases, roll the mixture into balls slightly larger than golf balls.

Place in patty cases and press down a little with the back of a spoon or fork.

Pop in the fridge for about 30min and then do the obligatory taste test with the dodgy one that never seems to look as good as the others.
