Lane Cove Resident Wye-Ping’s Christmas Fruit Cake

Who does not love a Christmas Fruit Cake. In the Cove was in the Lane Cove Plaza when we noticed a Go Vita Lane Cove sign advertising Glace Fruits for Christmas Baking.  We snapped a photo of the sign and posted it on the In the Cove Facebook Page.  Lane Cove Local Wye-Ping shared with us her Christmas Cake photo (that just happened to have Glace Fruit from Go Vita Lane Cove).  The Cake looked amazing and we just had to have the recipe to share.  Thank you to Wye-Ping for sharing her recipe.

Christmas Fruit Cake Recipe

Ingredients

375g sultanas
250g raisins
250g currants
1⁄2 cup mixed peel
3⁄4 cup halved glace cherries
1⁄4 cup chopped dried pineapple
1⁄4 cup chopped dried apricots
250g unsalted butter
1 cup brown sugar
1⁄2 cup brandy
1⁄2 cup water
5 eggs, lightly beaten (x-large eggs)
1 tablespoon treacle
Grated rind of 1 orange
Grated rind of 1 lemon
1 3⁄4 cup plain flour
1/3 cup self-raising flour
1⁄2 teaspoon bicarbonate of soda

Method

Combine fruit, butter, sugar, brandy and water in a pot. Stir constantly over medium heat without boiling under sugar has melted. Bring to the boil, reduce the heat to low, cover and simmer for 15 to 20 minutes. Transfer the mix to a large bowl and cool until room temperature.

Grease and line two 18-inch round cake tins. Add the beaten eggs, treacle, citrus rinds to the cooled fruit mixture and mix until well combined. Stir in the flours and bicarbonate of soda. Spread the mixture evenly into the prepared pans.

Bake in the oven at 150 degrees Celsius for 1 hour and 15 minutes.

Brush tops of cake with some extra brandy and let cool before decorating with glace fruit.

Decorations

350g of mixed glace fruit – pineapple, cherries, fig, apricot, peach, pear, orange.
Cut fruit into small pieces
50g of pecan nuts or blanched almonds or both
1 small jar of apricot jam – pick a smooth jam

Melt jam in a small saucepan with 2 tablespoons of water. Stir until it reaches to a boil and then take it off the flame. Brush top of cake liberally with jam and place pieces of glace fruit and nuts onto the cake to decorate. Brush the fruit with more of the liquid jam.
