Tequila is made from blue agave – native to the central western highlands of Mexico – it’s bound by a clearly defined geographic and agricultural footprint, including denomination of origin laws that state tequila can only be made in a small number of Mexican states (predominantly Jalisco). Other regions produce Mezcal – also made from the agave plant – but tequila must be made from the blue agave to earn its esteemed title.
