Hemp Seed and Quinoa Salad with Spicy Sweet Potato

Until recently Hemp Seed was not permitted to be sold as a food.  In November 2017 the law was changed to allow its sale.

According to Michelle, hemp has 50 -70% more protein than chia or linseed/flaxseed and is high in good omega fatty acids and low in carbs.  Michelle describes the taste as creamy (almost nutty like).  Hemp Seeds are great in almost anything from a smoothie to muesli or a hearty salad.

Ingredients

1 cup cooked Quinoa

2tbs chia seeds

2tbs hemp seeds

600 g sweet potato

1/2 tsp turmeric powder

1/2 tsp chilli flakes

1/2 tsp cayenne pepper

1/2 cup cooked mung beans

1 cup goji berries

2 cup red cabbage

Salt and Pepper to taste

Extra Virgin Olive Oil

Method

  1. Heat oven to 200c;
  2. Cut the sweet potato into chunks and then roll in olive oil;
  3. Combine the spices and dip the sweet potato into the spice mix;
  4. Roast for 40 minutes until tender and just starting to caramelise;
  5. In a large bowl combine all the other ingredients and toss together;
  6. Drizzle with Extra Olive Oil and season with a little salt and pepper.

This will easily feed 8 as a side dish and can be stored in the fridge for a few days.  Michelle does not bother to peel her sweet potato.  Just give it a good wash as the skin holds extra nutrition and fibre.
