ITC would like to introduce you to private chef Mark Kay founder of The Proud Peasant.
Mark is a private chef, and he will come to your home and cater for a function from canapes to a sit-down three to five course meal.
Mark’s credentials are very impressive. He grew up in Lane Cove and still lives in Lane Cove, apart from the 12 action-packed years he spent in London working with acclaimed chefs.
In 1998 Mark started his culinary career at Bistro Moncur Woollahra under acclaimed Chef Damien Pignolet. Mark was trained in Classic French techniques. He completed his apprenticeship at the Park Hyatt Sydney.
In 2003 Mark travelled to London, and the day after he landed in London, he became a member of the team opening St Johns. In the following 8 years, Mark worked in some highly acclaimed Michelin Star establishments in London.
Whilst working as Head Chef in London, Mark was asked to be a Consultant Chef de Cuisine at Grand Hotel Europe St Petersburg in Russia.
Before leaving the Northern Hemisphere, Mark also gained some amazing knowledge of North and South American Cuisine as he worked as Senior Sous Chef for the prestigious Chiltern Firehouse (sister hotel to the acclaimed Chateau Marmont in LA) under Nuno Mendes.
In 2015 Mark returned to Lane Cove with his young family (who are now students at Lane Cove Public School).
His first job back in Australia was with Collin Fassnidge and his team at The Four in Hand before it closed in 2016 (much to the disappointment of many diners).
Mark has also been Head and Executive Chef at Manly Pavilion and the Merivale group-owned French restaurant Felix.
The Proud Peasant
In 2018 The Proud Peasant was established …a bespoke dining/catering service.
This naturally transitioned to being a private chef service at a client’s residence or privately owned superyacht.
Mark’s food style is best described as Modern European, with influences notably from France, Spain, Italy, and Great Britain.
In essence, Mark’s passion is European food cooked classically using old and modern techniques resulting in bold and robust flavours, executed with a deft modern touch.
Mark can provide you with an array of canapes to impress your guests – let him do all the work in the kitchen.
Mark’s passion for food begins with selecting the best quality produce and bringing it straight to your plate. Book a personal chef for your home party and enjoy a bespoke dining experience.
