Meet the Chefs Behind The Alcott’s Latest Menu

    The Alcott’s latest menu has some dishes you will go back to time and time again.

    Senior Sous Chef – Rohan Talisayon

    Rohan was a typical 9-to-5 white-collar worker for a long time, with no connection to the food industry. Rohan is a Filipino born and raised in Sydney. His path took a risky turn when he decided to follow his passion for cooking.  Rohan says that this major professional shift was not just an extremely rewarding personal journey but a defining family experience as he took his two sons on his culinary journey.

    Rohan is fascinated by the unique ways food conveys messages, experiences, feelings, and stories. He was exposed to cooking at a young age through cultural gatherings. Before he knew it, he was regularly catering for friends and family in large gatherings at the dining table, where people were inspired to connect. He had found his passion. He loved expressing himself through food.

    After completing culinary qualifications and moving up in ranks, Rohan was first exposed to a commercial kitchen in a bistro but later found his passion for food through being immersed in the diversity of Mediterranean and European flavours.

    He spent many years experiencing other people’s stories and discovering new flavours and techniques. Fourteen years later, he is still in the kitchen.

    Rohan is currently the Senior Sous Chef at The Alcott in Lane Cove, working together with Head Chef, Simon Flanders, and a team of chefs.

    Their team constantly find satisfaction in maintaining the high quality and standards of their culinary experience.

    Moving to the world of cooking has meant Rohan has met celebrity chefs Manu Feildel and Collin Fassnidge, in person.

    Rohan noted it was an honour to be awarded the 2022 Perfect Plate Award.

    Simon Flanders, Head Chef

    Simon is originally from the UK and moved to Australia in 1998.

    He began work as a Head Chef only two years later, in 2000. Eighteen years later, he found his home at The Alcott.

    Simon is grateful that The Alcott has encouraged his creativity and fuelled his passion for creating reasonably priced dishes that showcase an extreme level of skill and attention to detail while using the highest-quality ingredients.

    In his career, he is proud and fortunate to have worked with some extremely influential and well-known chefs. Guillaume Brahimi and Simon worked together in a 3-hat restaurant, Quay Restaurant, in The Rocks. Shortly after uniting, they re-focused their efforts on cooking for the USIOC (United States International Olympic Committee) during the Sydney Olympics at Tattersalls Club, Elizabeth Street.

    Next, Simon became Executive Chef at both Tattersalls and the Royal Automotive Club of Australia. These achievements gave Simon the experience to assist with the opening of the Ivy, running their events in the Ballroom and Sunroom.

    Simon loves bold flavours and Mediterranean and Middle Eastern Cooking. He finds satisfaction in the kitchen when he can use home-grown and fresh produce to serve the flavors of these beautifully unique cultures.

    His favourite dishes on the current menu are the Harissa Free-Range Chicken, Heirloom Tomato Salad and Chocolate Mousse with white chocolate caramel.

    The Perfect Plate

    In 2022, The Alcott Lane Cove won the North Western Metropolitan Perfect Plate award with their Sesame Grilled Lamb Rump.

    The Perfect Plate Awards are the NSW club industry’s premier cooking competition. They showcase the incredible quality and variety of food at clubs, highlighting the many talented chefs in the industry and driving patrons into venues.

    Local clubs have been attracting talented chefs and are no longer a “parma only” venue.

    The Perfect Plate Award is judged entirely by diners, so every club had an equal opportunity to win. More than 160 clubs participated in the competition.
