Former Lane Cove Locals follow Their Passion for Farm to Fork

    Amy and Adam are former Lane Cove locals who fell in love with the NSW Southern Highlands. They had a vision to create something unique using their experience in the hospitality and events industry and embarked on a journey to deliver a true ‘Farm to Fork’ experience. They packed up their apartment in central Lane Cove (which is now rented out), reluctantly said goodbye to their Lane Cove friends, and moved to Highlands Estate.

    Highlands Estate was established in 2022 with the aim of producing world-class beef. The farm focuses on farming practices often adopted by dairy farmers and Wagyu producers and uses these practices across their full-blooded Wagu and Blank Angus herds to provide affordable farm-fresh premium-quality beef delivered directly to your door.

     

    About Highlands Estate

    Before the sun rises at Highlands Estate Farm, Adam tends to his Full-Blood Wagyu and Black Angus cattle, hand-feeding them a specially crafted grain mix that provides healthy fats and nutrients. This ritual takes place every day, and this structured approach produces flavourful, tender, and delicious beef.

    The farm’s high elevation and clean, crisp air provide the ideal environment for cattle to graze on green pastures.

    Amy says, “Cattle benefit just as much from quality feed as they do from a low-stress environment, and the environmental factors that contribute to their living conditions give our beef a unique flavour profile.”

    Farming is not a job for the faint-hearted. There is work to be done, rain, hail, or shine, seven days a week, and it is a lifestyle that takes dedication, passion, and drive.

    Points of Difference

    Highlands Estate has a vertically integrated supply chain that allows it to control each step in the process, providing a truly unique ‘farm-to-fork’ experience for customers. They are the farmer and the butcher and also deliver the produce themselves.  So you will know where your beef comes from and meet the man who hand-feeds his cows.

    Farming Practices

    Adam and Amy work the land, regenerating the paddocks and planting crops. They collect and reuse the organic matter from the farm to fertilise and replenish the soil. Soil Health is a priority for them, as they believe that looking after the land is one of the most important steps in providing premium-quality meat.

    Stock Control

    They personally tend to their animals 365 days a year, checking they are healthy and happy and are growing their stock to keep the breeding program in-house.

    Feeding Program

    Their grain is specially crafted in the Southern Highlands, containing healthy fats and nutrients that give the beef a unique flavour. The stock is hand-fed every day, and they grow their own silage and crops to feed cattle, controlling the farming process to ensure quality over quantity at every step.

    Meat Processing

    The cows are returned in quarters from the abattoir within 1 day. They are butchered onsite in a custom-built, high-spec meat processing facility, allowing Highlands Estates to customise orders to suit customers. It’s about ensuring every single carcass is handled with respect, skill, patience, and meticulous attention to detail.

    Packaging and Delivery

    The beef is packaged onsite and transported in a custom-built cool room van, delivering straight to your door.

    Amy and Adam have a deep respect for the land and its harvest and that is what drives them to be passionate about the food they put on your table.
