When we spotted this recipe on local caterers A Cut Above Caterings‘ Facebook page, we just had to share – ITC is a sucker for a good chutney!
“A classic combo for a working lunch today….Turkey, Brie and our homemade Cranberry & Spice Chutney. The chutney is so good & so easy, throw all ingredients in a pot for 10 minutes & you’re done.”
Cranberry & Spice Chutney
185ml apple cider vinegar
50g dried apricots, chopped
200g pitted dates, chopped
1/2 cup sugar
1 cinnamon stick
1 tsp ground ginger
1/2 tsp ground allspice
pinch of ground cloves
1/2 tsp salt
Place all ingredients in a small saucepan. Bring to the boil, stirring until sugar dissolves. Simmer for 8 minutes until thick & syrupy. Pour into sterilised jars (and add to your lunch!)
