Foodie Tuesday – Chocolate Almond Butter Slice

Welcome back to our guest foodie blogger, Michelle from The Source Bulk Foods Lane Cove. This time Michelle is sharing a snack that is tasty and healthy. All ingredients are available at The Source Bulk Foods.

Chocolate Almond Butter Slice

INGREDIENTS

Crust

1½ cups raw or roasted almonds or walnuts

¼ cup raw cacao powder

Pinch Himalayan salt

1 cup dates packed (about 200g)

Nut Layer

1 cup creamy or crunchy almond butter

1 tbsp maple syrup

Pinch Himalayan salt

Chocolate

1¼ cup dark chocolate buttons

100ml coconut milk

1 tbsp TSBF coconut oil

Method

Add the dates to a small bowl of water and soak for 15 minutes.

Prepare crust by blitzing the almonds, cacao powder and salt into a meal in a food processor. Remove from bowl and set aside.

Add the drained dates to the food processor and mix/pulse until they are in small bits. Add the almond mixture to the food processor and blitz to combine until the mixture starts to clump.

Transfer the dough to a lined square cake/slice tin and spread to evenly distribute. Press into a solid, even layer. Set in freezer to chill for 5-10 minutes

In a small mixing bowl combine the almond butter with the maple syrup and salt. Stir to combine. Add the almond butter mixture to the crust in spoonfuls. Spread and pack the mixture into a flat layer. Set in freezer to chill for 5-10 minutes.

Warm the coconut milk and oil in a small pan. Pour the coconut milk directly over the chocolate and whisk until fully melted.

Pour the chocolate over the nut base. Roll the tin around to spread evenly. Place back in the freezer to set for 5-10 minutes, or until semi-firm to the touch (enough to slice).
