This week for Foodie Tuesday, we share a tasty looking but guilt-free treat, courtesy of Soulful Fitness. When this new Lane Cove business isn’t running their increasingly popular yoga, pilates and spin classes, they are busy adding some healthy recipes to their website.
We hoped this evil looking slice would satisfy our sweet tooth and make us feel virtuous at the same time 😉
Cacao Coconut Slice
If you are after something sweet and chocolatey without the carbs and sugar then try this very quick, raw and healthy slice that anyone can make in minutes.
Ingredients
Base
½ cup coconut flour
1 Tbsp pea protein powder
200g raw cashews
1 ½ Tbsp coconut cooking oil
4-5 Tbsp water
Middle
200g dried dates
120g dried cranberries
1 Tbsp cacao powder
2 Tbsp pea protein powder
2 Tbsp desiccated coconut
½ Tsp vanilla extract
Top
1 ½ Tbsp coconut cooking oil
12g Cacao powder
1 Tsp Vanilla extract
Method
- Lightly spray with rice bran oil a square cake tin.
- Mix in a bowl coconut flour, cashews (after they have been finely grinded in a processor) and pea protein.
- Add water and coconut oil. Mix with hands and push down into the cake tin covering the bottom as a smooth base.
- Then process dried fruit, protein powder, cacao and coconut. Mix and add vanilla extract.
- Smooth out on top of other layer in tin. It will be sticky but push down with spoon or hands.
- Then mix vanilla extract, cacao powder coconut oil (melt if needed) into bowl until smooth and glossy.
- Pour on top as the final layer. Smooth out and refrigerate for hours.
- Cut into 35-40 squares
